Holiday Baking!

Only 2 weeks until Christmas and I'm itching to start baking.  I'm not the best cook, but I LOVE to bake. 

3 years ago we were in the middle of a kitchen renovation.  We'd bought my mom's house and we were re-doing most of it.  For some reason I can't remember now we started the kitchen demo in December.  We were on a major time crunch.  I was hosting Christmas Eve dinner and Christmas morning brunch...we had to be done on time!!  Thankfully I had the foresight to make some Christmas cookie dough ahead of time.  I remember our kitchen was half done and there I was--baking cookies while David and the guy that was helping him were shimming the cabinets after installing them.  We didn't have counter tops yet, our sink wasn't hooked up,  I had to dig my cookie sheets out of storage...but by golly I was going to have homemade cookies for Christmas!  All I needed was the stove to be plugged in and functional and my premade dough! 

Despite all the chaos that year, the baking part was stress free.  So every year since I've tried to get a few batches of cookie dough in the freezer ahead of time, and then a day or two before Christmas I bake them up.  It's wonderful.  I love to give cookies as gifts to teachers, coaches, neighbors, etc.  So I tend to bake a lot of cookies, and it's so nice to just pull them out of the freezer and place on a cookie sheet. 

This year I'm starting today.  I'm going to make Raspberry Pinwheels.  I got the recipe out of a cookie magazine that my mother-in-law had at her house and I LOVE them.  Everyone does.  They're a big hit.

 

Raspberry Pinwheels
1 cup butter, softened
1 cup sugar
1 egg
1 tsp vanilla
1 tsp baking powder
1/4 cup seedless raspberry jam
3/4 cup finely chopped walnuts

Cream butter and sugar
Beat in egg and vanilla
Add flour and baking powder.  Mix well.
*if it's a little dry add some water 1 tsp at a time*
Roll out dough into a 12 inch square
Spread dough with jam and sprinkle with nuts. 
Roll up tightly jelly roll style and wrap in plastic wrap. 
Chill for 2 hours. 

Unwrap dough and slice into 1/4 inch slices. 
Place 2 inches apart on an ungreased cookie sheet.
Bake at 375 for 9-11 minutes or until edges are golden brown.  Makes 3 dozen.

Peanut butter blossoms
Chinese Almond
"snowballs"
spritz cookies
fudge
and, of course, sugar cookies that we decorate together. 

Anderson loves to help me.  His "job" is running the mixer.  I have a big stand mixer and he likes to add the ingredients and then turn it on.  He also is the taster after they're done!

Well it has certainly been a while! 

We've just been unpacking and unpacking and unpacking...nothing terribly exciting to write about.  It has, however, opened my eyes to just how much STUFF we have.  I am really good about getting rid of stuff...and we still have STUFF!  I detest clutter, rarely hang on to things on the off chance we might need it someday, and I like for everything to have a place.  If it doesn't, it's gone.  So I am really surprised how much we have accumulated in our 8 years of marriage.  A lot of it is baby gear/clothes, and I am hanging on to that just in case we have another baby.  I also have a lot of glassware/china/serving pieces that were passed down to me from my grandparents and other family.  But as to what everything else is and how we ended up with so much...I'm stumped!  As we have unpacked we've gone through things and have started quite the garage sale pile...Spring can't come fast enough!! 

We don't have anything up on the walls yet, but we have started decorating for Christmas.  Anderson was so excited.  (Although I think he might have been more excited about the egg nog--delivered special by Grandpa Jerry this weekend.  They only make the kind we like in Ithaca, NY, so we put in a special request!)  He had a great time pulling the ornaments out of boxes and oohing and aahing as he put them on the tree.  It was very cute. 

My dad and stepmom visited this weekend.  We went to the Great Lakes Science Center in Cleveland--I would recommend this place to everyone!!  It was a ton of fun for everyone.  We were there for about 5 hours and still didn't see it all.  It was all hands on, so Anderson had a great time, and the adults learned stuff too!! 

I'm starting to get some things crossed off my Christmas To Do List.  It's different this year--I don't feel stressed yet!  I think it's because we don't know many (any) people here yet, so I don't feel pulled in a million different directions.  Plus I'm not working at the moment.  It's been a welcome break, in a way, to not have anything to do...ever!  LOL  I'm sure it will get old soon, but this is my least stressy holiday season in a while.  I have my list of presents that I need to buy and wrap, some cookies to make...and that's pretty much it. 

See...nothing too exciting.  Hope everyone has a great holiday.  We're heading to NY at some point to see everyone, and Anderson is so excited to see his friends (me too!)  I'm sure I'll have more to write about then.

One of the most exciting things, for me, about moving is the chance to decorate our new house!  I LOVE to decorate.  I'm not the best, many "visions" that I've had haven't *quite* turned out how I pictured, but on the whole I'd say I'm pretty good...and did I mention that I love it? 

There are many challenges in our new house.  The first is that it is MUCH bigger than any other house we've lived in.  There are a lot of empty rooms.  We definitely don't have enough furniture for this house.  The second challenge is that we are renting--we don't want to put a lot of money into this house, or into furnishings, since we'll only be here, at most, 3 years.  The guys that we are renting this house from have agreed to let us do pretty much whatever we want to it--we can paint, hang pictures, and they've even said we can do things like change out light fixtures and stuff like that.  So short of doing some major demo we've got the green light.  But...again, we don't want to spend a lot of money on a house we don't own.  And our third challenge is budget.  At the moment we're renting this house and we still have the mortgage on our house in NY.  It will be a few months until we close on that.  Plus, Christmas is coming.  Lots of expenses. 

David and I talked it over and it's very important to both of us that even though we're renting and only going to be here for a few years, we need to make this place HOME.  So we decided that we are going to have to buy some things for this house.  We're going to try and do it as afforably as we can, and we're going to try and buy pieces that we really like and can transition to another home in the future. 

When David and I first moved to FL we bought a kitchen table.  Correction--DAVID bought the kitchen table.  He was so proud when he brought it home to our apartment.  It looked great.  But...there were no chairs.  When I asked him where the chairs were his answer was that the table was cheaper without the chairs.  Um...no kidding!  But where are we going to sit?  So basically we used two beat up leftover chairs that his parents gave us--they were nicked and cracked and paint spattered--and when we had company we brought out some very unsteady folding chairs.  It was not good.  When we moved to NY we didn't have an eat-in kitchen so it wasn't a big deal--our chairless table went into the basement.  Now that we're in OH and have an eat-in kitchen again, I decided that I was going to find us a kitchen table that had chairs!  Then I could use the other table in my scrapbooking room.  Problem(s) solved. 

So I've been on the hunt.  I knew that I wanted a round table, possibly one that would expand into an oval with a leaf if we needed it to be bigger.  I was thinking that I wanted it to be white, with white chairs, but I was open to other colors/stains.  Definitely casual, something that can hold up to a very busy 6 year old who likes to make his own breakfast!  So we've been going to every furniture store we can find and it appeared that our table just didn't exist.  Everything was either too big, too formal, the wrong color...nothing worked.  We kept passing this other furniture store, but it was always closed.  Finally, one day after I picked up Anderson from school I drove by and it was open.  So we went in.  And there it was--as soon as we walked in I saw THE table that I'd been thinking about.  I was so excited!  And...then I saw the price.  It was $1349 for the table and 4 chairs.  That was A LOT more than we'd been planning on spending on a table, especially since we have many other things to buy as well--coffee tables, end tables, bookshelves, TVs...LOTS more to get.  I was a little bummed, but I knew there had to be something out there that would work. 

Yesterday we decided to go to Ikea.  We needed to get some bookshelves, a storage unit for Anderson's toy room, a chair for the office, and a nightstand for Anderson's room among other things.  I looked on their website and they did have a round white dining table with a leaf.  And they had chairs that I liked too.  I was hopeful that we'd like it when we saw it because it was much more affordable--$249 for the table and $59 each for the chairs.  I'm sure the quality isn't as good as the more expensive table, but honestly...I'm ok with that.  I'm all for spending the money for couches, beds, dressers...that sort of item.  But a kitchen table and chairs--they're going to be used everyday.  They'll get beat up...I'd rather spend a little less so I don't feel AS bad when it gets nicked, bumped, scraped, colored on with crayons, or worse!  Ikea is a great place for things like this because even though their furniture is sold in flat packs that you have to assemble at home and is sometimes particle board rather than solid wood, they are affordable, durable, and they *look* like you spent more money on them! 

So we ended up getting a tall and short bookshelf for our office, and chair and ottoman for our office, a storage shelf for Anderson's toy room, a chair for Anderson, a nightstand for Anderson's bedroom, AND we bought the table and  6 chairs for our kitchen.  Plus a bunch of odds and ends that we always end up finding when we go to Ikea.  We spent a grand total of $1186.94.  So we got all of THAT for less than the cost of the more expensive table and chairs that I originally found. 

I was very excited when we got home with our 14 boxes of new furniture until I realized that we had to assemble it all!  So before we went to bed last night David and I put together the table and 2 of the chairs to see if we REALLY liked it.  No worries--we love it!  It just may be a while until we have the other 4 chairs put together!!!

School days

Woo hoo!  We finally have our internet/TV/phone hooked up so I can update you all on how things are going. 

First--Anderson's school.  For months I have been worried for him, worried about him leaving his friends, teachers, and a school where he felt comfortable.  Monday was his first day at his new school and I was shocked that it seemed to go off without a hitch.  I mean, I was DREADING it for him.  I can't imagine what it's like to be the "new kid" because I never started at a new school.  I went from K-12 in the same district with no upheavals.  We went to school early to meet with the principal, get a tour of the school, and to meet his teacher.  Anderson amazed me with his maturity--I guess it doesn't really occur to adults to shake hands with a little kid, but Anderson held his hand out to everyone he met and said, "Hi.  I'm Anderson.  Nice to meet you."  If he was nervous you certainly couldn't tell.  We did find out that the cut-off date for starting Kindergarten is August 30th.  So, that means that technically Anderson should be in Kindergarten since his birthday is in October.  But, since he was a first grader in NY he's a first grader in OH.  Judging by the homework he's brought home this week (yes, he has homework here--he is very excited) he's going to be a bit ahead of what they're doing here now, but I'm sure that's fine.  I just hope that socially he'll fit in being at least a year younger than his classmates.  He's come home everyday telling me that he had an "awesome" day. 

Our house is S L O W L Y coming together.  We've had to purchase some things since this is a much bigger house, and we have a list going for other things we need.  We're planning a trip to Ikea later on this week.  I can't wait to have all the boxes unpacked and the rooms set up the way I want them.  Once that's done we can start painting and hanging pictures...my favorite part! 

That's it for now.  Since I spent the morning supervising the cable/internet guy I have gotten NOTHING done.  I need to get a few boxes emptied before I go pick up Anderson.  We're going to run a couple of errands and then tonight I am making dinner for the first time in our new house.  We've been eating out a lot--the first few nights I blamed it on exhaustion, lack of ingredients, then the past few night we've been furniture shopping after David gets out of work.  David doesn't really like to eat out/spend money, so I'm afraid that those days are over for a while!  LOL

We made it!!

So I've been without internet for a week and haven't been able to update on our move.  The DAY arrived yesterday--the day we've been looking forward to AND dreading for about a year...ever since this new job of David's was mentioned as a possiblitiy.  Now, after going back and forth about applying, his interview in DC, the crying and sobbing (by me) over whether to accept the job once it was offered to him, the months of living apart and me acting as a single parent, the packing up and saying goodbye to everyone...it was time to actually leave.  I had been staying with my mom for a week while our stuff was shipped out to the house in Cleveland (actually, it's a suburb of Cleveland called Westlake).  So yesterday I loaded up the car, picked Anderson up from school, and hit the road to Ohio.  The hardest part, surprisingly, was seeing all of Anderson's friends and teachers say goodbye to him at school.  My family--it was sad, don't get me wrong, but I know that I'll see them soon and they'll always be our family.  So that was more of a "see you later" type of goodbye.  But at school I went to Anderson's classroom about 5 minutes before school ended to help him carry his stuff, and when it was time to leave all the kids surrounded him with hugs and goodbyes...it was very sweet.  I got a little teary.  And then we bumped into friends and teachers on the way out, everyone wishing us well.  It was hard to leave...everyone there has been so wonderful to us.  We actually stopped at the flower shop on the way out of town and ordered up a big flower arrangement to be sent to the CEA on Monday to say thanks.  Anderson even wrote his own card.  I can only hope that Anderson's new school is half as wonderful.  We'll find out Monday! 


In the car I think it hit Anderson--he started crying.  He's missing his friends, his grandparents...it was heartbreaking.  But, this is what we've been striving for all summer.  To sell the house so we can be together with David again, so I kept reminding him of this.  I'm hoping he can settle right in and with the help of Skype he can stay in touch with the people he loves.  Now that we're actually HERE it's a little bit of a relief (for me) because I had been dreading yesterday so much.  Now it's today...and it's "over" so it's all good!  LOL 


So after the very LONG ride out to Cleveland we were very tired.  But, it was very exciting to see the new house!  I know David was very nervous that I wouldn't like it.  Due to the circumstances of the move he had to locate a rental house rather quickly and I wasn't able to see it until yesterday.  And it's HUGE!  Over 4000 square feet.  My old house was around 1800.  But it has a nice layout, real hardwood floors (not laminate, which I am not a fan of), big rooms, lots of room to roam, a large pantry, upstairs laundry, a fenced yard with a play fort already there...lots of good things.  There are also things I'm not too fond of--dark wood trim, BRASS FIXTURES EVERYWHERE (ugh!), and really short cabinets/countertops in the bathrooms (really odd when you are crouching down to brush your teeth). And of course the kitchen and fireplace situation is nothing like what we had at home.  But...mostly, I think he did a great job.  It's a super cute house in a development, and everyone has said to David, "how did you find a rental in that neighborhood?"  so I think it's a really nice area.  We spent the morning putting the kitchen together and we're heading out now to purchase some things that we need.  Even though I am missing our old house, and the things we did to make it ours, I'm looking forward to putting this house together to be our home for the next few years.  And even though we're renting and not buying, it'll still be home to us.  Anderson will remember this house, so I am going to do all I can, within reason, to make it spectacular!  We're allowed to paint and pretty much do anything we want to it, so that's nice.  Of course any major updates that we would do with a house we owned we WON'T be doing to this rental.  I hope to post some pictures soon.

They're heeeeere!

The movers arrived today.  I was dreading this day for a long time.  And silly me--I cleaned my house so it was all spic and span and organized in the hopes that it would make the packing easier.  Clearly, that was a waste of time!


I was originally led to believe that on the first day of packing the movers would be concentrating on areas of the house that we don't use as much--the formal dining and living rooms, garage, basement, and the place at the peak of the house that we use for storage and call the "cubbyhole".  So I'd planned on pulling together all the stuff that Anderson and I would need for the next week or so while they were doing those rooms.  Um...WRONG!  The movers immediately wanted to pack up the kitchen and the bedrooms because, apparently, those take the longest.  So I was frantically running from room to room, from mover to mover, rescuing items that we HAD to have with us.  There were 5 people packing, so I was zipping around quite a bit.  Things that I needed to save:  Anderson's Halloween costume (imagine if that was on a moving truck this week!), my medicines, the paper muffin cups for Anderson's birthday cupcakes for school, Anderson's birthday presents, my camera, my TO-DO list (what would I DO without that?), my massage gift certificate (I'm hoping to squeeze it in next week LOL), Anderson's beloved stuffed snake, Hiss, Anderson's new wallet with his birthday money in it because I promised him a trip to TRU to spend it...the list could go on.  Plus I had to pack clothes, toiletries, etc.  Those of you who know me know that I am not the best packer, so this was NOT a fun morning.  I think I had to have the movers unpack about 3 boxes to find things for me.  I am sure I was driving them nuts. 


So while I am thankful that I don't have to pack up our belongings to move, I am struggling with having other people do  it for me.  SO much of this situation has been and will continue to be out of my control, and I just feel like I need to control SOMETHING! 


Since our house is mostly packed up at this point we will be moving over to my mom's a bit sooner than planned.  I realized when I went to make Anderson's lunch and I didn't have any knives to spread the jelly, ziploc bags to put pretzels in, and when I noticed that the grapes were lying on the counter and their bowl had obviously been packed (dirty, no less), that it was going to be too hard to stay in the house while we were in the process of packing and moving.  Tomorrow Anderson will have cereal in a paper cup that I found and I will have one of his squeezy yogurts that is still in the fridge, and then we will be outta here!  It hasn't quite sunk in that this is the last night we'll be in this house.  But, as I've been telling Anderson all week, we have lots of great memories and pictures, and this house will always be OUR house in our hearts!

Sort of too sad to blog

This whole moving thing is WAY harder than I thought.  I've been meaning to hop back on here and blog a little about how things are going, but I'm finding that I'm feeling a little blue about everything and I wasn't sure I could write something that didn't come off as too sad.  So, we'll see I guess. 


The news is slowly traveling.  We told Anderson (he was happy), then our parents, my employer, and I've been slowly telling my friends as the topic comes up.  I think I'm still very numb about how fast this is happening, and therefore I am having trouble accepting it and saying the words out loud.  I'm even pretending, a little, that it's not looming right around the corner.  My neighbor came over with an order form for Christmas fruit baskets last night, and instead of telling him I woudn't be in town when the order comes in, I ordered up a $35 basket of apples, pears, and pineapples!  Um...?????  I might be a *tad* bit in denial!


Yesterday a representative from the moving company came to evaluate how much stuff we have and to estimate how long they'll need to pack us all up.  They will most likely start packing us up next Tuesday, we'll be out of the house by Friday, and we'll be in Cleveland on November 5th.  We'll be staying with my mom for the last week while our stuff is in transit. 


To say that I am overwhelmed is an understatement.  So I'm trying to just live in the moment, cram as much fun stuff in as possible, and take it a day at a time.  I figure I'll have weeks, possibly months, in OH with not a lot planned because we won't know many people.  I'll have lots of time to rest and get organized.  For now we're trying to do everything we can fit in...and I'm trying to not let the little voice in my head that whispers to me that we're doing <insert Upstate NY activity here> for the last time bother me.

New Beginnings

So...just 10 minutes ago I started this blog.  New beginning.  I've never blogged before.  The reason I've decided to join the world of blogging is that the Uhl family has some pretty big changes coming up I thought it would be helpful (to me) to document these changes.  I also thought it would be helpful to others (our friends and family) to stay connected to us as these changes take place. 

We are moving.  Major new beginning.  To make a LONG story very short, David has taken a new job with the US Coast Guard and he is going to be stationed in Cleveland, OH for the next 2-3 years.  About a year ago when we started thinking about David applying for this job I NEVER thought we'd end up in Cleveland.  I am very sad to leave home.  With the exception of my years in college and the 6 years we lived in Panama City, FL this has been HOME to us.  Literally...I grew up in the house we are now selling.  And the older Anderson is getting, the more activities he's involved in, the more I am feeling connected in our town and it will be that much harder to pull up our little roots and move to a new city.  However, in the long run this will be a good move for our family.  David was not super happy at his old job, we didn't see him much as he worked long hours, and if there was a big project due we didn't see him at all.  His new job is lower stress, more time off, and he seems to really like it. 

David started his new job in July, which means that Anderson and I have been living in New York by ourselves for the past 3+ months.  It's been very hard to be apart.  I have decided that single parents have the hardest job in the world!  We've had our house on the market since April and just yesterday received a signed contract.  The buyers want to be in
ASAP--November 1st!  So the next 3 weeks are going to be nuts. I have to tell friends and family that we're moving.  Heck, I have to tell Anderson that we're moving!  (He is looking forward to it, though...he wants to be with Daddy again so they can play Star Wars ALL THE TIME.  I'm apparently not the best playmate when it comes to both sides of the Force.)  We have to coordinate our move.  (Yes, we're hiring movers).  I have to wrap up all of our activities here, squeeze in some last minute doctor/dentist appointments, prepare Anderson for leaving school, tell MY job that I'm moving, say goodbye to everyone and everything that has been our life up to this point.  And, in the middle of all of that, Anderson's birthday is looming and I am determined to make it a happy event even though we'll be leaving a few days afterward.  Thankfully, since David is already in Cleveland he's found us a rental home and has signed the lease.  The fact that I have never laid eyes on this house that we'll be living in for the next 2-3 years is probably going to be the subject of a future blogging entry. 

I am feeling very overwhelmed at this point.  Which is one of the main reasons I wanted to start this blog--to help me sort through the crazy events that will be happening in the next weeks, months, years.  I get frazzled pretty easily so I am afraid that this time will just fly by and all I will remember is the chaos.  I check my email many times during the course of the day, even when I am super busy, so I figured I can carve out some time to blog.  And I really hope that our friends and family here in NY will follow our journey...maybe we won't feel so far away!
